Christmas Jam

I wanted to leave you with a quick, inexpensive and easy recipe that will in turn yield you about 10-14 gifts (depending on the size jars you need). It's a recipe for Christmas Jam. It's absolutely wonderful, super easy, very quick and like I said, easy on the pocketbook. This past Thanksgiving, my mom helped me whip up a batch for some family here in Canada. (I'd never made jam before but could easily do this now on my own.)




CHRISTMAS JAM
Ingredients:
2 packages (20 ounces each) frozen whole strawberries or 2-1/2 quarts fresh strawberries
1 pound fresh or frozen cranberries
5 pounds sugar
2 pouches (3 ounces each) liquid fruit pectin

Directions:
Grind strawberries and cranberries in a food processor or grinder; place in a large kettle. Add sugar. Bring to a full rolling boil; boil for 1 minute. Remove from the heat; stir in pectin and return to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat.

Cool for 5 minutes; skim off foam. Pour hot into hot jars, leaving 1/4-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water bath. Yield: about 14 half-pints.


I am wrapping my jars in clear cellophane, tying with some rafia and ribbon and some homemade tags with the recipe.

Thanks for another great recipe! I am using your orange peel potpourri too...it is so great! I am rather scared of making jam but this sounds do-able!

You just reminded me how badly I need to get back to making my Grandmothers jam, she's no longer with us. She taught me years ago, and I MUST follow tradition.

I love that your SS girls are willing to do a Beth Moore study. I can't get mine to read their Bible an extra 3 minutes each day. How do you do it? I just had a talk w/my girls last Sunday about their attitude and disrespect during class. I even told them that my 4yr old son sits and listens better than them! So, we'll see how they do next week. Tell me how your class terms work...is it like semesters in school?

Your jam looks delicious! Strawberries are my favorite! I've never made jams/jellies before, but both my grandma used to. I really do need to learn how to do some of that stuff.

The -30/-22 temps do not sound fun at all. I've been complaining about our 2 degree temps. I HATE being cold, so I don't know if I'd make it in the frozen North! ;)

How are things w/Shane's grandma and grandpa? Did the mess get all cleaned up from his parents water leak?

Mandi, thanks for stopping by my blog and for your sweet comments. I am so glad you did--I am definitely adding your blog to my bloglines list. I love the orange peels drying on the stove. We eat lots of oranges this time of year. I like them in the disposal because it freshens it, but now i am going to have to trade off between the stove top to dry and the disposal. Happy New Year!
